Breakfast
One slice of bread with vegan Mett and half a slice with PB* and cinnamon spiced maple syrup, one mandarin and a cup of earl grey.
*I actually decided to give homemade nut butters another try last night. I made PB and tahini and it worked like a charm this time, I can't wait to try it with other nuts! :)
Linner*
Spinach, rosemary roasted potatoes, some avocado, steamed cauliflower, cut up chickpea cutlets (VCON) with avocado sauce and some tahini. (I'm positively sure I looked like a little pig trying to stuff it all in my mouth, so good!)
*Lunch AND dinner, I thought linner sounded better than dunch y/y? :) I had lunch rather late, at around 3pm I think, and I felt too stuffed for a proper dinner so I 'skipped' it and had some snacks instead.
